I love a warm, satisfying bowl of soup any time of year, especially when the food combinations mean it’s slenderising and body-shaping, too!

The healthy calories from the sweet potato and black beans in this recipe mean this soup is as nutrient-dense and slimming as it is flavourful and nourishing. I love it when all my meals tap into the body-shaping power of food dynamics like that!

Slenderising Sweet Potato and Black Bean Soup

Simple, Slimming Ingredients

  • 1 large sweet potato, peeled and cubed
  • 1 large red pepper, diced
  • 2 stalks celery, diced
  • 2 15-ounce cans black beans, drained and rinsed (read label to assure preservative-free)
  • 1-liter box of vegetable stock (check the label and choose a preservative-free and vegan)
  • 3 cups water
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp Celtic salt (optional—leave out for maximum body-shaping)
  • ground pepper to taste
  • 1 Tbsp cilantro, minced

Step-by-Step Instructions

  1. Heat a small amount of water in the bottom of the pot and “sautee” the sweet potato, pepper and celery until they start to get soft.
  2. Add half your beans, half your stock, and half your water.
  3. Use a high-speed blender or immersion blender to puree the contents of the pot until smooth.
  4. Now, add the rest of your beans, water, and stock, and toss in those flavour-packed spices, too!
  5. Let it all come together over medium heat  for about 30 minutes.
  6. Garnish with cilantro to serve, and enjoy the slenderising power of body-shaping food dynamics!
