raw vegan pad thai
So you like Pad Thai too! Who doesn’t? 🙂
My gorgeous husband and I perfected this recipe last week together.
Pad Thai: Raw and Delicious!
Ingredients:

4 cups shredded zucchini
2 cups of shredded carrots
1/2 cup shredded red cabbage
1 sliced red capsicum
1/2 cup sliced mushrooms
1 cup bean sprouts
Half a cup chopped cilantro
Pinky of ginger
Juice of one fresh lime
Fresh mint

Put all ingredients into large bowl and weave it all together, once satisfied that all flavours and nutrients are beautifully tangled put onto a serving plate and now let’s make the dressing.

Dressing:

1 cup raw, unhulled sesame seeds
1/2 cup fresh apple juice
1/3 cup orange juice

1 lime squeezed
1/4 cup fresh crushed pistacchios
1/4 cup tamarind sauce (you can get this from most Asian grocers)
1 finger fresh ginger

 Mix dressing ingredients together with yours and your children’s pre washed hands (for the most fun) or a fork (to stay clean), once all ingredients are infused into one another pour the dressing generously on top to complete the Pad Thai.
