Hi Wild One,

This makes an amazing substitute for sour cream. Better than the original! Refrigerating the mixture for a few hours before using it allows it to thicken and the flavours to develop.

Not only is this low-fat, vegan sour cream delicious and simple to prepare, it also has incredible health and weight loss benefits.

Tofu is the main ingredient in this recipe, and that’s a great thing, gorgeous. Tofu provides exactly the sort of super-satisfying, low-fat, healthy calories we want in a body-shaping meal.

Recent research suggests that adults on a Standard American/Australian Diet would increase their folate, vitamin K, calcium, magnesium, iron, and fibre intake by substituting tofu for meat and dairy. What’s more, the switch would lower their total cholesterol by close to 125 milligrams per day, and daily intake of saturated fat by over 2 grams.

All that, of course, would play a huge role in lowering our risk of obesity and other diseases, and supporting healthy weight loss.

In addition (in case you needed any more reasons to love this ingredient!) tofu is a great source of iron. (So are tempeh, sesame seeds, kale, greens, squash, and pumpkin seeds, you might be interested to know.)

Preparation: 5 minutes

Ingredients

  • 1 package (12.3 ounces) silken tofu, drained in a fine-mesh strainer
  • 2.5 tablespoons fresh lemon juice
  • 2.5 teaspoons coconut sugar
  • Dash of salt (optional)

Instructions

  1. Combine the drained tofu, lemon juice, sugar, and salt in a food processor and process until the mixture is completely smooth.
  2. Transfer to an airtight container, cover, and refrigerate for at least 2 hours.
  3. Enjoy the incredible flavours of this dynamic, body-shaping food!

This recipe can keep in the fridge for up to 2 weeks.

Use on top of nachos, pizza (I know right crazy! But check it out, you have nothing to lose but kilos), potato salad and pumpkin soup. So good!
