Here are the super simple ingredients:

  • 1 cup coconut water
  • 2 cups raw cashews
  • 1/4 of a small avocado
  • 2 teaspoons curry powder
  • 1/4 teaspoon cayenne
  • 3 medium zucchinis
  • chilli paste to taste

Super Simple Instructions:

1. Spiralize zucchinis to make the noodles.

2. In a blender, (I use an Omniblend Australia, discount code Wild Donna) combine all other ingredients and blend on high until the sauce becomes smooth.

3. Toss zucchini noodles with curry sauce in a large bowl until thoroughly coated.

4. Serve.
