Today was the final day of the Wild Bodies program for one of my clients Dave. This is the email that I received upon his completion, posted with his permission.

Hi Donna,
Since starting your program I have developed a fitter stronger body and my health is fantastic, I feel switched on all the time & everyone that I know complements me on how I look younger and I seem to always have so much energy and I am Always glowing. I have lost a total of 10kg and I have gained muscle so I probably have lost more than 10kg of fat… I feel 150% better than I ever have. I have been mostly raw and fully Vegan the whole time… found it quite easy as I have developed the discipline to eat well even going out to restaurants. I am learning more about nutrition and exercise than I ever have and I am learning more and more about my own body & what I feel I need. Just having you there if I had a question and reading the information on the wild bodies FB page has been excellent. I am planning on doing a body building comp in march next year 100% vegan so I will keep you updated with my results. How do you know if you’re a fruitarian? 10 signs.

Here are 10 signs that you, too, are a fruitarian. 
 
1. When you moved in with your best friend or lover you didn’t flinch at putting your matching Blendtecs/ Vitamixes on the same bench, just incase you want to use them simultaneously. 
And two spiralizers in the draw won’t hurt either.
 
2. You forget, in casual conversation, that not everyone knows what 80/10/10 stands for.
And almost lose your breath when they don’t know what ‘carbs’ means when thrown into a casual sentence.
 
3. You think it’s socially acceptable to drink from a large glass jar in public.
Or to carry a meal of 10 bananas through the airport check in, after all, you know you’ll need it!
 
4. You know at least one person who goes by their YouTube name.
And you probably do too.
 
5.  You can’t believe people still juice when they could blend!
*Gasp*
 
6. You have an educated opinion on why you’ll never eat chocolate again and that’s that. Besides who needs it when you have fruit? 
Same goes for meat, dairy, eggs, salt and olive oil!
 
7. You can’t look at a bag of salt without seeing water retention. 
And that was your biggest down fall when you first began carbing up but now you get it.
 
8. If you go out to a restaurant, you carb the f*ck up before you go or you know they’ll charge you $58 for 3 meals of salads (hold the dressing) and  you’ll still be hungry.
You regularly consider just not going to restaurants any more. Is it worth it after all?
 
 9. On the odd occasion that you walk into a grocery store looking for instant carb satisfaction you’ve had no idea what to buy, because all you saw was dead animals, processed ‘non’ foods, pesticides, hormones, and GMOs.
And you walked out empty handed.
 
10. You’ll only date a vegan.
 Because besides the moral… you know they taste better.

So here is a little interview with Luci.

WD (WildDonna): Luci I am a new admirer of your product line Eco Minerals, mineral make-up. Can you please tell us a little about your product?

Luci: Hi Donna, it is lovely to meet you – thanks for your time and i love everything you stand for.
Yes… ECO minerals is a brand i started with a friend…for our friends. It was an experiment in creating something beautiful with no compromises …and selling at a price that allows everyone to experience a premium, natural makeup that is as good for the skin as the environment. Thankfully…it has been a successful and inspiring journey…and now ECO minerals is becoming a national beauty brand.

WD: How did you get started with Eco Minerals? Please tell me about your science back ground too.

Luci: I started ECO minerals when i had a tiny baby and was so in love with her i wanted to create a business that allowed me to be with my daughter and not be out at work. Discovering the beauty of mineral makeup inspired me as i could finally create a product that is 100% beautiful..with out compromise. I was also excited to embody my minimal packaging principles…and offer eco refills and awareness about the issues surrounding excessive packaging.

WD: Is it correct that your powder has 26% SPF?

Luci: YES! being pure minerals (no fillers, chemical or botanical) we have achieved an SPF of 26 with even a light application. Quite simply, the minerals create a physical barrier to block out the sun.

WD: Can you please explain the importance of your products not have nano particles?

Luci: Nano particles have such questionable safety and are rare in nature. Nano particles are particles so tiny that they can pass through barriers in our body (skin, organs etc) and our body has no way of filtering them out. I believe that our bodies can not safely be exposed to nano particles – there is too much unknown (and known) that makes it very important that our customers are not using nano particles on their skin.

WD: I’ve had the run down on Eco Minerals packaging. I am so impressed- if only all packaging was this sustainable!

Luci: When customers demand it – we will se big changes in packaging. Our ECO refills are being embraced all around the world …so it is a big thanks to everyone taking the time to top up their containers that is making this possible.

WD: Does Eco Minerals have any big plans for the future?

Luci: YES – we are now supplying stockists nationally…and internationally with a beautiful recycled timber stand packed full of all of our best selling products- created from old buildings in Byron Bay . We only started last year and are already getting out there which is very exciting

Obsessed is a word the lazy use…

Obsessed and extreme are two words that I have thrown my way pretty regularly. Obsessed I am not dedicated I am. Extreme I am not dedicated I am.


I don’t necessarily think that those who call me obsessed or extreme are lazy… but rather that they don’t yet have a strong enough ‘Why’ to get them moving. I can give 110% to my causes and actions because my ‘Why’ is very strong.

Why? Because I deserve complete health?
Why? Because I inspire others when I am at my best to be their best.
Why? Because people aren’t listening to the animals, this is one way that I speak for them.

Raw, vegan goodness.

6 fl oz almond milk

2 medjuul dates

1 oz avocado

3 c spinach

3.5 c ice cubes

Put in Blendtec and bllllllllend Baby! Ice Cream setting ideally or if you’re just using a normal blender then pulse ’til you have the consistency that you desire. :)

Community Based Super Market in the CBD! 

Can you believe it? There is now a Community Based Supermarket in the CBD! We’ve entered into an agreement with a national company specialising in training and employment of persons with a disability. All shop staff are clients of the service and are paid award wages.

The staff designed and built the shop fit-out entirely from used timber pallets and other recycled materials. (Nothing is new except the produce.)  

For now, please note, the shop is under the RealFood Network banner, located just inside the Lake Street end of the Main Street Arcade, which runs from Grafton Street, just off Shields and across from Rusty’s. In an effort to keep all product very fresh and moving through, we will almost always have some outrageous (below our own cost) prices.

Example – two weeks back – all citrus (oranges, mandarins, grapefruit, lemons & limes – $0.50/kilo! It is a tiny & funky shop. But it is cool, with great staff and we can afford it.

When to eat a banana.

When to eat a banana.Wait until your banana reaches 7 before you eat it and it’ll be so much better for you, your digestion and your taste buds!

It it’s too ripe for you to eat that way I HIGHLY :) suggest that you throw it in a smoothie.

Delicious DatesSometimes I have dates in my meal 3 times a day! They’re so good for you. Full of good carbohydrates and great as a sweetener or a meal in itself or added to meals for extra flavour and sweetness such as salads, fruit smoothies, green smoothies and deserts.

Nourishing meals, live music, free wifi, community talks, workshops and live music, what more could a vegan ask for? Organic produce? It sure is! Meals are prepared with fresh produce from its own permaculture garden and local organic farmers. Popular pizza, raw or cooked and an entire menu of raw and an entire menu of cooked… ALL VEGAN (YAY! Not even any use of honey. YAY!! Finally another business who is leaving the bees alone!), raw desserts, probiotic drinks, fresh juices, coffee, and tea galore.

Mandala is known for being the number one place on the Gold Coast for vegan pizzas… but to be honest… I’d rate it top in the country. And if there is better anywhere else then I would LOVE to know about it! Mandala has a huge menu to choose from with all your favourites! The outdoor seating is so lovely day or night! The service was so efficient that it hardly felt like we waited at all and we noticed that all the surrounding tables were promptly served also. So although this place can get really packed it does not affect the service and the smiles on the faces of the healthy, glowing staff members.

I recommend you go on a saturday night with your friends or partner for a (usually sold out! So book a table in advance) night of great music, food and dancing. I suggest you order the kombucha of the day, nachos or pizza for dinner, the chocolate cake with coconut ice cream for dessert and an LSD (Latte Soy Dandelion) to wrap things up. An absolutely divine dining experience.

Pros: Amazing food and drinks, friendly staff, great atmosphere and a raw menu.
Cons: No cooked gluten free pizza bases.

Butter Chicken- Vegan!

Vegan Butter Chicken

Serves 6

Curry Ingredients:

4 tsp lemon juice
1/4 cup water
2 tsp ground ginger
4 tsp curry powder
1 1/2 – 2 tsp chili powder
4 tsp ground cumin
3 bay leaves
2 cups tomato puree
2 cups almond milk
1/2 cup plain vegan yoghurt: So Delicious coconut – plain is best unless you’re gonna whip it up yourself you clever bunny :)
2-4 teaspoon garam masala
Cayenne pepper to taste
1/2 tsp Himalayan rock salt
Black pepper to taste

Vegan Chicken:

1 (16 oz) tofu or chickpeas
1-2 teaspoon garam masala

Roti/chapati or basmati rice to serve with.

Directions:

Heat a large non-stick  saucepan or wok over medium heat. Add lemon juice, water, ginger, curry powder, chili powder, cumin, and bay leaves. Cook and stir for 30 seconds. Stir in the tomato tomatoes and cook for 3-4 minutes more.

Reduce the heat to low and mix in the almond milk. *For a creamier curry, transfer contents to a blender or food process and process until smooth. Return to pan and simmer for 10 minutes, stirring frequently. Stir in the vegan yogurt and season to taste with garam masala, cayenne, salt, and black pepper. Remove from heat and set aside.

3. Heat a separate medium sized non-stick pan over medium heat. Add the chick peas and cook, stirring constantly, for 5 minutes. Reduce the heat to low and season the chick peas with teaspoons garam masala. Stir in about a 1/4 cup of the tomato-yogurt sauce and simmer for 2 to 3 minutes so it can absorb some of the awesome flavours.

4. Transfer the chickpea mixture to the saucepan and heat through.

5. Serve.

Method

Soak organic lentils over night

Cook the rice

While rice is still hot but has done cooking then throw in the tomatoes so that they soften through out the dish

Add in a lentils to desired taste

Let cool and serve to your happy, healthy pooch.

Raw Vegan Chocolate Balls

Raw Vegan Chocolate Nut Balls

These delicious treats make awesome snacks in school or work lunch boxes or great to put beside a cup of herbal tea. They will last in a sealed glass container in the fridge for weeks!

Ingredient

1 cup nuts – raw almonds, raw cashews, raw macadamias
1 cup organic pitted chopped dates
1/2 cup dried chopped apricots
2 Tbsp unsweetened cacao powder
1 Tbsp fresh lemon juice
1/2 tsp cinnamon
1/4 cup organic desiccated coconut

Method

Prep: 10 minutes

Mix the coconut and cinnamon in a small bowl and set aside for rolling.
Put all other ingredients in a blender (I use a Blendtec) or food processor.
Roll into small balls and coat with the coconut mixture.
Store in a sealed glass container in the fridge.

Vegan Snacks- Wild Pocket Bombs

Vegan Snack IdeasWild Pocket Bombs will burst flavour throughout your mouth. A flavour sensations! And it’s so easy.

Ingredients

Your fav leafy greens

Your fav herbs

Un hulled tahini

Miso

Directions

Simply lay down your favourite leafy green to use as the pocket for the rest of the filling.

Lay on top of that your fresh herb of choice such as basil, dill, fennel, parsley, sorrel, etc…

Dab a small amount of miso in the centre

Dab a small amount of un hulled tahini in the centre

Fold in the corners of the leafy green.

Let the flavour burst in your mouth!

Low Fat Raw Vegan Lasagne

Raw Vegan Lasagne Recipe

Ingredients:

5 Large Zucchinis

Cherry Tomaotes Aprrox 2 Pints

Bunch Italian Parsley

Bunch Cilantro

Bunch Arugula

Bunch Spinach

Quarter cup Pine Nuts

1 cup of sundried (oil free) organic tomatoes

1/2 avocado

Directions:

To make the zucchini layers, mandolin or a potato peeler. This slices the zucchini into long strips (as you can see in the image above0 so that you can use them to separate your layers.

After you lay your first layer of zucchinis into your dish, you will need a food processor to finely chop a mix of the parsley, cilantro, and spinach. After you put them in the food processor, these pieces of greens become so tiny that you can sprinkle them on top of the zucchini shreds.

Lay a few of the spinach or arugula leaves as bedding between the zucchini layers.

Marinara: Blend together tomatoes, sundried tomatoes, avocado and a splash of herbs with water if needed.

Strain the marinara dressing to make it thicker and less watery. Now add a generous layer to your lasagne.

After you add in the marinara, add another layer of zucchini.

Next, in the food processor, I put in arugula and then I sprinkled that on top of the zucchini.

Next in a blender (I use a Blendtec), I made the pine nut “cheese sauce.” Simply blend one large zucchini with a quarter cup of pine nuts. Spread this as the next layer in your lasagna. Yum!!!

I add one more layer of zucchini, and then I slice up my cherry tomatoes to lay them across the top.

Cover the cherry tomatoes with one last layer of zucchini. Press firmly as to push everything together nice and firm.

Vegan Pizza

Pizza Base

Total Time: 40 mins
Prep Time: 10 mins
Cook Time: 30 mins

3 1/2 cups buck wheat flour
1 teaspoon salt
1 cup water, very warm
2 tablespoons olive oil

Preheat oven to 400 degrees F.
In large bowl, combine flour and salt. Add warm water and olive oil, knead about 5 minutes or until mixture is well combined and forms a ball. Let dough sit for 10 minutes in a warm place.
Roll out dough and fit to oiled cookie sheet or pizza pan. Place in oven and bake for approximately 10 minutes or until very slightly browned.
Remove from oven and let cool.

Add Pizza Toppings of your choice

Thin sliced eggplant

Kidney beans

Sliced tomatoes

Green capsicums

Mushrooms

Sundried tomatoes

Fresh basil

Fresh rosemary

Return pizza to oven and bake approximately 10-20 minutes. Cool, slice, and serve with raw vegan cheese option on the side to be spread on top like sour cream.

2 Tablespoons lemon juice
1/2 teaspoon sea salt1/2 c warm water

Blend, serve and enjoy.
