Homemade Green Kale Chips with Vegan Cheese

Have you tried Kale Chips yet? When done well they’re so good! And they’re as healthy as they are delicious.

I’ve added a super quick cooked version and a slower more nourishing raw version. Both Yummy, both plant-based, vegan.

Simple Ingredients:

  • 2 bunches of kale
  • 2 1/4 cups cashews, soaked for approx 5 hours
  • 1 1/2 cups of spring or filtered water
  • 1/2 cup nutritional yeast
  • 2 1/2 teaspoons sea salt (optional, I prefer without but most guests prefer with)
  • 1/2 teaspoon black pepper

Simple Instructions:

1. Remove kale spines. Rip the leaves into pieces, approximately the size of your kid’s hands (they might like to have this task).

2. Drain cashews. In a blender (I use and Omniblend Australia discount code WildDonna), blend with the remaining ingredients. The final product should be a cheesy dressing. In a large mixing bowl, thoroughly coat the kale pieces with the dressing.

3. On a dehydrator tray fitted with baking paper, place coated kale, leaving enough room for air to circulate around them.

4. Raw version: Dehydrate overnight for at least 12 hours until kale pieces are crisp and delish.

4. Cooked super quick version: If you don’t have a dehydrator or you NEED THESE NOW! 🙂 I’ve got you. Instead, preheat an oven to 180C. Bake on baking paper for 10 to 15 minutes, until the edges are brown, but not burnt.

5. They will keep in an airtight container for up to a week at room temperature.

Tip: I suggest that you don’t wash any organic products if they’re straight from the garden or farm. The nutrients from the ground are super nutritious and majorly lacking in our diets. When I first heard this I thought it was a little ridic. Now, I get a little disappointed when an organic meal is rinsed because it could have been that bit more nourishing. If you do it for a while, you’ll experience the benefits too and you’ll understand… I’m not crazy! Lol. ;p
